Nitrogen is the most widely used food preservation gas globally. Its ability to displace oxygen without leaving chemical residues makes it ideal for maintaining food quality, extending shelf life, and reducing food waste. The global food-grade nitrogen market exceeds $3 billion annually, driven by increasing demand for fresh and minimally processed foods.
Food spoilage is primarily caused by three factors: oxidation (reaction with oxygen), microbial growth (bacteria, mold, yeast that require oxygen), and moisture changes. Nitrogen addresses the first two factors by creating an oxygen-free environment. Modified Atmosphere Packaging (MAP) using nitrogen typically achieves 99.5% nitrogen with less than 0.5% residual oxygen in the package headspace.
MAP is the largest application of nitrogen in food preservation. Different foods require different gas mixtures:
Nitrogen-flush packaging for potato chips, tortilla chips, nuts, and other snack foods serves a dual purpose: it prevents oxidation of the oils (which causes rancidity) and provides cushioning to prevent breakage during transport. A typical nitrogen-flush packaging line operates at 5-20 Nm³/h per packaging machine, with the nitrogen injected just before sealing to achieve less than 2% residual oxygen in the package.
Large-scale food storage facilities use nitrogen-controlled atmospheres to preserve grains, seeds, dried fruits, and nuts in silos and warehouses. The nitrogen atmosphere (typically 98-99.5% nitrogen) eliminates insect infestations without pesticides, prevents mold growth, and maintains product quality during long-term storage. A 10,000-ton grain silo typically requires 50-200 Nm³/h of nitrogen for continuous atmosphere control.
